Shrimp penne pasta is easy to make with the perfect ingredients. Try this quick recipe that satisfies all areas of taste!
Ingredients:
-Whole wheat penne pasta
-1 tablespoon olive oil
-Shrimp (frozen or thawed)
-2 handfuls chopped spinach leaves
-2 handfuls chopped mushrooms
-1 red bell pepper chopped
-1 tablespoon Julienne cut sun-dried tomatoes
-¼ cup (1 serving) Trader Giotto’s Alfredo Pasta Sauce
-1 tablespoon minced garlic
-Pinch of garlic salt
-Pinch of red chili pepper
-Pinch of mixed seasoning salute
Directions:
Shrimp Marinade:
If shrimp is frozen: place desired amount of shrimp in strainer and rinse with room temp. water for 60 seconds. Let drain and sit for 5 minutes. Place in Tupperware or bowl and put in refrigerator for 1-2 hours. If shrimp is already thawed, start directions below.
Place shrimp in bowl or Tupperware. Add 1 tablespoon olive oil, 1 tablespoon minced garlic,1 tablespoon sun-dried tomatoes, pinch of red chili pepper, pinch of mixed seasoning salute. Stir together and put back in refrigerator for 20 minutes.
Pasta:
Bring large pot of water to boil over high heat. Add whole wheat penne pasta and cook until tender. Stir occasionally about 8-12 minutes. Drain pasta and set aside.
Cooking Shrimp:
After 20 minutes, pull shrimp out of refrigerator and pour all contents into medium sized skillet. Cook over medium heat for 5 minutes. Stir frequently using spoon to flip shrimp on all sides. After 5 minutes shrimp may start to grill. Turn heat off right before the golden brown starts to form around the shrimp. Pour into bowl and set aside (preferably in microwave or oven to stay warm)
Creamy Vegetable Sauce
In that same skillet, pour ¼ cup Trader Giotto’s Alfredo Pasta Sauce into pan. No need to clean the skillet. Whatever is left in bottom will add to the flavor or the cream sauce. Add all chopped vegetables (spinach, red bell pepper, mushrooms) to sauce. Add pinch of garlic salt. Cook over medium-low heat for 5-8 minutes stirring frequently. Sauce should start to thicken, turn off all heat and let sit for 2-3 minutes. Add cooked shrimp to cream sauce and stir until all shrimp are coated.
**Transfer the pasta to a large serving bowl and pour creamy vegetable shrimp sauce over top. Serve immediately and ENJOY! For extra flavor, add a pinch more garlic salt and parmesan cheese.**
